This imperial porter was aged for 13 months in a maple syrup barrel that previously held Cognac. The results are an incredibly intricate mix of wood, spirit, syrup, and chocolate-porter goodness. No one flavor is overpowering, but they all come together in a suave and sophisticated final product. The flavor develops with each sip. First you notice strong aromatics of French Cognac, then wood tannins and chocolate wash across your palate, and the aftertaste bursts with maple syrup and hints of coffee.
